February 2018: My Month in Photos

It’s hard to believe we’re almost 3 months into 2018 – where has the time gone? February has been pretty non-existent for me; I’ve spent it working, hibernating and feeling poorly.I’m sort of glad to see the back of February. James and I have both been ill this month so we’ve spent February hibernating, and I totally lost my love for social media and blogging. I found it hard to put a post together so I took a little step back. I’ve never been one to write a blog post *just because*, so I’ve been enjoying reading my favourite blogs on a daily basis, including Little Miss Katy and the lovely Laura from Middle of Adventure!

I’m hoping March will be slightly warmer (although how mad is this snow!) and more productive, and I’ll hopefully fill my time with fun days out and delicious food. For now though, here’s what I’ve been up to in February.

Slimming World prawn fried rice

I set myself a new year’s resolution to cook more, so this month I made Slimming World’s prawn fried rice and it was actually pretty good. It’s a “fakeaway” version of a Chinese dish, but packed with fresh vegetables, plump prawns and fluffy rice. I’ve been trying to eat better this month, and I’ve been to the gym a couple of times with James – so it’s small steps!

Dinner at Wildwood

I went for dinner at Wildwood with some friends I use to work with a couple of years ago, and I had a fun evening catching up and gossiping over some delicious sweet potato fries and the most incredible hoisin duck pizza. I rarely eat pizza – and if I do it’s a takeaway one from Dominos – so I decided to try the Hoisin Duck one at Wildwood. I chose the small size and it arrived piping hot, with melt-in-the mouth duck, a sprinkle of spring onions and a drizzle of hoisin sauce. I’d definitely recommend it.

Pancake Day

I’d actually planned to do a pancake day post but I was literally struck down with a cold/flu for 2 weeks and felt pretty shabby, so I only managed to make and photograph some traditional sugar and lemon crepes. I didn’t even get to properly enjoy pancakes on pancake day as my throat was literally on fire, so I’ll have to hold a special day for pancakes in March…

Valentines Day

I was home ill for Valentines day with a cold/flu, so I spent the day feeling sorry for myself and sad that I couldn’t be with James. We got to spend time together at the weekend which was nice, but I had the most horrendous cough so we spent the weekend hibernating. James got me a cute little card and a bundle of chocolate so I definitely didn’t miss out. <3

I have a thing for sunsets

This photo must have been the calm before the storm. It was taken this week on my way home from work; the air was crisp, the sky bright blue and pink fluffy clouds filled the skyline. It was the perfect wintery evening.

Beast from the east

I woke up to the thickest blanket of snow in Chelmsford so the beast from the east has finally struck! I had trouble getting to and from work but now I’m just thankful to be home, wrapped up in my duvet with my electric blanket on. I think the poor weather is set to last until the weekend so I won’t be able to see James, so I guess I’ll spend the weekend hiding in a duvet fort with copious amounts of hot chocolate!

 

 

I’m hoping March will be more productive and exciting. So far I have a West End show booked with James and I’m going to a Christening in Somerset where I’m going to be a Godmother (yay!) so hopefully March will see us full of health and exciting things to do. πŸ™‚

      We are going to see School of Rock! I’ve heard really good things about the show, so I’m planning on watching the film this week to refresh my memory! πŸ™‚

    My boyfriend and I have a few exciting things to look forward to this month luckily. 2018 started out pretty crap for us, so fingers crossed everything looks up from here on. I should really cook more.. I hate cooking which is why I never bother! But it’s then so easy to eat snacks and a load of rubbish πŸ™ Oh and the beast from the east hit Norwich hard too! Although, I was out that Wednesday morning at 7:30am hahaha x
