Potato and Leek Winter Soup

When winter comes around, I want to focus my eating around hearty, warming meals. I’m talking sausage casseroles, beef stews, roast dinners with all the trimmings and warming soups.

For me, winter is all about soup: whether it’s a good ol’ can of Heinz tomato soup (my go-to desk lunch) or carrot and coriander with a sprinkling of pepper on top. My favourite soup though is my Mum’s potato and leek recipe. The leeks and potatoes are soft and delicate with a delicious oniony soup-base. You can add any other wintery vegetable to it, or even add some chicken to make the soup a perfect winter warming dinner.

I always eat my soup with a crunchy bread roll or hot buttered toast – the best dipping food!

This winter potato and leek soup is great for lunches, as a snack or can be bulked up with meat for dinner. It’s easy to make, warming to eat and can last a good few days.

Debenhams sent me a Morphy Richards soup maker and tasked me with creating a delicious winter soup recipe: so read on for this super easy but fulfilling recipe!

Potato and leek winter soup

INGREDIENTS

1 leek, chopped into rings

2 onions, chopped up

3 potatoes, peeled and chopped

Stock cube

Salt and pepper

Cold water

METHOD

  1. Chop up the leek and onions into small pieces and add to the soup maker.
  2. Wash, peel and cut up the potatoes, and add to the soup maker.
  3. Add a fresh or powdered stock cube to the mixture.
  4. Fill the pot up with cold water to the MAXIMUM line – the ingredients mustn’t go past this line otherwise it won’t cook properly.
  5. Add a touch of salt and pepper to taste.
  6. Pop the lid on and press the ‘mode’ button. If you want a totally smooth soup, then press the smooth mode (which takes 21 minutes to cook). I went for the chunky option which takes 28 minutes to cook.
  7. The soup maker will beep once it’s finished. Wait for it to finish beeping and then remove the lid. The soup looked a bit too chunky for me, so I used the ‘blend’ mode a couple of times to blitz the ingredients up.
  8. Once you get the soup to the desired consistency, it’s time to serve it up!

 

The easiest recipe ever – but it makes such a warming, tasty and fulfilling soup.

I served it with a spoonful of cream and a sprinkling of garlic pepper to give it a little kick.

As it’s Christmas, and the festive season is upon us, I served the soup in this super cute glittery dinner set, to add a touch of sparkle to the dish! The rose gold detailing catches the twinkling Christmas tree lights, and makes for the perfect bowl of goodness to snuggle in front of the TV with.

    The soup sounds delicious. I love eating soup in winter too, and potato and leek is one of my favourite.

    Ohhhh now, something that makes soup in an easy step is my kind of gadget. I love soups in the colder months, this looks amazing. Its not a huge great contraption either. Looks fab x
