I like to bring something a little different to my blog and mix things up, and this recipe is no exception! I’m a foodie, there’s no doubt about that, and when it comes to something healthy but tasty I’m right in there. The sticky but sweet glazed meatballs sat on a bed of sweet potato mash is the perfect combo for a summers day.
Simply cook or dry fry the meatballs for 20 mins. Peel and cut the sweet potato into chunks and dry fry in a pan with a teaspoon of olive oil. Once they’re soft, mash down and put to one side. To make the glaze, mix together 2 tbsp honey, 2 tbsp tomato ketchup, worcester sauce, water and seasoning to taste. Place the meatballs back in the pan and let the sauce glaze them.
We cheated at dessert, Tesco had this delicious passionfruit cheesecake with sugared lemon peel. It tasted so zesty and fresh!

I love meatballs and my butcher even sells them already prepped! We haven't been having very summery weather yet but I'm making a Summer Pudding today or tomorrow to put on my blog for Midsummer.
